what is the purpose of a check valve in the handle of a pull out kitchen faucet?

The check valve in any “water” assembly is there to prevent contamination of your water supply. If you were to leave the faucet in dirty dishwater and then turn off the supply, it could siphon back into the system. A check valve eliminates this hazard.
